This technique involves heating oil or ghee and adding various spices such as mustard seeds, cumin seeds, curry leaves, asafoetida, dried red chilies, and other spices. The tempering process enhances the flavor of the dish and is often used at the beginning or end of cooking.
Here's a simple example of how phodani is typically done:
1. Heat oil or ghee in a pan over medium heat.2. Once hot, add mustard seeds and wait until they start to crackle.
3. Add cumin seeds, followed by curry leaves and chilies.
4. Optionally, add asafoetida (hing) and other spices like turmeric,onion or garlic.
This tempered mixture is then added to dals, vegetables, or other dishes to enhance their flavor.

Simple recipe for making Phodanicha Bhaat:
Ingredients:- 2 cups cooked rice (preferably cooled)
- 1 large onion, finely chopped
- 1-2 green chilies, finely chopped
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 3-5 curry leaves
- 1 tablespoon peanuts (optional)
- 2 tablespoons oil
- Salt to taste
- Fresh cilantro, chopped, for garnish
- 1 tablespoon lemon juice
- Grated coconut (optional, for garnish)
- Chopped vegtables (optional)

- If using leftover rice, break up any clumps and fluff it with a fork. If the rice is freshly cooked, spread it on a plate to cool and dry a bit.

- Heat oil in a large pan or kadai over medium heat.
- Add mustard seeds and let them crackle. add cumin seeds, chopped garlic, and curry leaves. add green chilies(if using) and sautƩ for a minute.
- Add the chopped onions and cook until the onions become soft and translucent.
- Add red chili powder, turmeric powder, roasted peanuts, salt and stir well.
- Add the cooked rice to the pan. Mix gently to combine all the ingredients, ensuring the rice is evenly coated with the spices.
- Cover and cook for 3-4 minutes on low heat, until the rice is heated through.
