Udid vada, also known as Medu vada , is a popular South Indian snack made from urad dal (black gram). It's typically shaped like a doughnut with a crispy exterior and a soft interior.   Basic Udid vada / Medu Vada recipe: Ingredients: 1 cup urad dal (split black gram) 1-2 green chilies (optional) 1 inch ginger, grated (optional) 1 teaspoon cumin seeds 1 small onion, finely chopped (optional) A few curry leaves, chopped (optional) 2 tablespoons rice flour  Salt to taste Oil for deep frying Instructions: 1. Soak Urad Dal: Rinse the urad dal thoroughly and soak it in water for 4-5 hours or overnight. 2. Grind the Dal: Drain the water and grind the urad dal to a smooth, fluffy batter using minimal water. The consistency should be thick. 3. Prepare the Batter: Transfer the batter to a bowl.   Add rice flour,cumin seeds and salt. Mix well to combine. 4.
