Pav Bhaji
Pav Bhaji is a popular Indian street food dish that originated in Mumbai. It consists of a spicy, mashed vegetable curry (bhaji) served with buttered, toasted bread rolls (pav). The dish is known for its rich flavors, vibrant color, and buttery taste.

- 2 large potatoes (boiled and mashed)
- 1 cup cauliflower (finely chopped)
- 1½ cup green peas
- 1 small carrot (finely chopped)
- 1 small capsicum (finely chopped)
- 1 large onion (finely chopped)
- 2 tomatoes (finely chopped)
- 1 teaspoon ginger-garlic paste
- 2 tablespoons butter
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1½ tablespoons pav bhaji masala
- Salt to taste
- 1 cup water
- 1 tablespoon lemon juice
- 2 tablespoons chopped coriander leaves
- 8 pav buns
- 2 tablespoons butter
- 1½ teaspoon pav bhaji masala
Vegetables preparation:
- Chopped vegetables (carrots, Cauliflower, potatoes, onions, ginger, garlic, capsicum)
- In a pressure cooker add chopped vegetables, green peas, and tomatoes with fresh water and a pinch of salt.
- Close the lid of the pressure cooker and cook on medium heat for 3-4 whistle.
- Turn off the heat and let the pressure release naturally.
- Open the lid, Mash cooked vegetables using a potato masher and set aside.
Step 1: Preparing the Bhaji (Vegetable Curry)
- Heat oil and butter in a pan. Add chopped onions, ginger and garlic, sautƩ until golden brown.
- Add chopped capsicum, Stir and cook for a few minutes or until they turn soft.
- Add turmeric powder, red chili powder, salt coriander powder and pav bhaji masala. Mix well.
- Add mashed vegetables, adjust salt, and water as needed. Mash everything together using a potato masher.
- Simmer for 10-15 minutes, stirring occasionally.
- Add lemon juice and chopped coriander. Mix well.
- Heat a tawa (griddle) and add butter.
- Sprinkle coriander leaves or pav bhaji masala over the butter.
- Slice the pav buns in half and toast them on the tawa until golden brown.

- Serve hot bhaji with buttered pav, chopped onions, lemon wedges, and extra butter on top.
