Here’s a traditional Maharashtrian-style recipe for Karalyachi Rassa Bhaji (Bitter Gourd Curry in a Spiced Gravy):
Ingredients:

- Bitter gourds (karela/karle): 4 medium
- Salt: as needed (to reduce bitterness)
- Water
- Onions: 2 medium, finely chopped
- Garlic: 4-5 cloves,
- Ginger: 1-inch piece,
- gratedGreen chilies: 2-3, slit
- Curry leaves: 8-10
- Coriander leaves: for garnish
- Roasted Peanuts : 2 tsp
- Sesame seeds: 2 tsp
- Roasted Chana dal : 2 tsp
- Cumin Seeds : 1 tsp
- Coriander seeds :1tsp
- Fennel Seeds : 1 tsp
- Turmeric powder: 1/2 tsp
- Red chili powder(or kanda lasun masala): 1 tsp
- Garam masala: 1/2 tsp
- Goda masala (optional): 1 tsp
- Tamarind pulp: 1 tsp (or a small piece soaked in water)
- Jaggery: 1 tsp (adjust to taste)
- Salt: to taste
- Asafoetida (hing): a pinch
- Water:1.5 to 2 cups
- Oil: 3 tbsp
1. Prepare the Bitter Gourds:
- In a warm water add bitter gourds, salt and let them rest for 20-30 minutes to reduce bitterness.
- Wash the bitter gourds and slice them into rounds or strips. Remove seeds if they are too hard.

2. Cook the Bitter Gourds:
- Heat 2 tbsp oil in a pressure cooker, add chopped garlic and onions, cook for 1-2 minutes.
- Add bitter gourd slices, turmeric powder, salt, mix.
- Add gravy masala, red chili powder or onion garlic masala (kanda lasun masala), mix.
- Add tamarind pulp and jaggery. Stir to balance the tangy and sweet flavors.
- Mix gently to combine everything, ensuring the bitter gourds are coated evenly with the masala.
- Add water to adjust the consistency of the gravy.
- Close the lid of the pressure cooker cook on high heat until the first whistle,Turn off the heat and let the pressure release naturally.
- Open the cooker, add garam masala and goda masala (if using). Stir well and cook for additional 1-2 minutes to let the flavors blend. Garnish with chopped coriander leaves.
