Uttapam is a popular South Indian dish, often referred to as an “Indian pancake” or “thick dosa.” It is made from fermented rice and urad dal (split black gram) batter, similar to dosa, but the batter is poured thicker, creating a soft and spongy texture. Uttapam is usually topped with a variety of ingredients, including:

• Vegetables: Chopped onions, tomatoes, green chilies, carrots, and bell peppers.

• Herbs & Spices: Coriander leaves, curry leaves, and sometimes a sprinkle of cumin or pepper.

• Cheese or Paneer (optional): For a fusion twist.

It’s a wholesome dish that can be enjoyed for breakfast, lunch, or even as a snack.

Here’s a simple uttapam recipe:

Ingredients: 

For the Batter: 
  • 1 cup rice (regular or idli rice) 
  • 1/2 cup urad dal (split black gram) 
  • 1/4 teaspoon fenugreek seeds (optional, for flavor and fermentation) 
  • Salt (to taste) 
  • Water (as needed) 
For the Toppings: 
  • 1/2 cup onions (finely chopped) 
  • 1/2 cup tomatoes (optional, finely chopped) 
  • 2 green chilies (finely chopped) 
  • 1/4 cup grated carrots (optional) 
  • 2 tablespoons coriander leaves (finely chopped) 
  • Oil or ghee (for cooking) 
Instructions:

Step 1: Prepare the Batter 
  • Rinse and soak the rice, urad dal, and fenugreek seeds in water for 6–8 hours or overnight. 
  • Grind the soaked ingredients into a smooth batter using a blender or wet grinder, adding water as needed. 
  • Add salt and mix well. 
  • Allow the batter to ferment in a warm place for 8–10 hours (until it doubles in volume). 
Step 2: Prepare the Toppings 
  • Mix the chopped onions, tomatoes, chilies, grated carrots, and coriander leaves in a bowl. 
  • Keep the topping mixture ready. 
Step 3: Cook the Uttapam 
  • Heat a non-stick or cast-iron pan on medium heat and grease it lightly with oil. 
  • Pour a ladleful of batter onto the pan and spread it slightly to form a thick pancake (about 6–8 inches in diameter).

  • Sprinkle the prepared vegetable topping evenly over the batter and press lightly so it sticks.

  • Drizzle a little oil or ghee around the edges and on top of the uttapam. 
  • Cook for 2–3 minutes on medium flame until the base is golden brown. 
  • Flip the uttapam carefully and cook the other side for another 2 minutes.

Serving Suggestions 
  • Serve the uttapam with coconut chutney, tomato chutney, and sambar.
