Puri Bhaji
Puri Bhaji is a classic Indian dish made up of two main components: puri (deep-fried, fluffy bread) and bhaji (a spiced potato curry).

- Whole wheat flour: 2 cups
- Cumin seeds 1/2 tsp
- Chili flakes 1/2 tsp
- Kasuri methi 1/2 tsp
- Salt: 1/2 tsp
- Water: as needed (for kneading)
- Oil: for deep frying
- In a mixing bowl, combine whole wheat flour, cumin seeds, chili flakes, kasuri methi, and salt.
- Gradually add water and knead into a stiff, smooth dough. Cover and let it rest for 20 minutes.
- Divide the dough into small balls and roll each into small, round discs.
- Heat oil in a deep pan. Once hot, gently slide one puri into the oil.
- Fry on medium-high heat until it puffs up and turns golden. Flip and cook the other side.
- Drain on a paper towel and repeat with the remaining dough.

- Potatoes: 4 medium (chopped)
- Tomato (chopped): 1 medium
- Green chilies (slit): 2
- Garlic: 3-4 cloves
- Ginger (grated): 1 tsp
- Turmeric powder: 1/2 tsp
- Red chili powder: 1/2 tsp
- Cumin seeds: 1 tsp
- Curry leaves: 10-12
- Asafoetida (hing): a pinch
- Oil: 2 tbsp
- Salt: to taste
- Water: 1-1.5 cups (adjust as needed)
- Fresh coriander leaves (chopped): for garnish
- Heat oil in a pressure cooker, add fennel seeds, cumin seeds. Let them splutter.
- Add chopped curry leaves, green chilies, garlic, ginger, and a pinch of asafoetida. SautƩ briefly.
- Add turmeric powder, coriander powder, red chili powder, and chopped tomatoes. Cook until the tomatoes are mushy.
- Add chopped potatoes, and salt, Mix well.
- Add water to adjust the consistency of the bhaji.
- Close the lid of the pressure cooker and cook on medium heat for 2 whistle.
- Turn off the heat and let the pressure release naturally.
- Open the lid, Simmer for 2-3 minutes.
- Garnish with fresh coriander leaves.
- Serve hot with puris.
