Sem ki Sabji (Green flat beans)
Green flat beans (Romano beans), known as “Sem ki Sabji ” in Hindi. This spiced, stir-fried dish is simple to make and pairs well with Indian bread or rice.
Here’s a popular Indian recipe for Spiced Green Flat Beans (Sem ki Sabji):
Ingredients:- 250 grams green flat beans (Romano beans), trimmed and cut into 2-3 inch pieces
- 2 tbsp oil (vegetable, mustard, or ghee)
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/4 tsp asafoetida (hing) (optional)
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder (adjust to taste)
- 1/2 tsp garam masala (optional, for added warmth)
- Salt to taste
- 1 medium tomato, chopped (optional)
- Fresh cilantro, chopped, for garnish
1. Prepare the Beans:
- Rinse and trim the beans, cutting them into 2-3 inch pieces. If the beans are very mature, you can blanch them for 3-4 minutes to soften slightly, then drain, and keep aside.
- In a large pan or kadhai, heat the oil over medium heat. Add the cumin seeds, mustard seeds, and asafoetida (if using). Let them sizzle for a few seconds until fragrant.
- Add chopped garlic, chopped onion, SautƩ until the onion is translucent, about 2-3 minutes.
- Add the drained green flat beans and stir.
- Add turmeric powder, and salt . Stir for a few seconds, then cover and cook on low to medium heat, cook for about 4-5 minutes or until the beans are tender.
- Once the beans are almost done, add red chili powder, grated coconut, cover and cook for an additional 2-3 minutes. Turn off the heat, garnish with chopped coriander leaves.
3. Serve:
- This dish pairs well with roti, naan, or steamed rice and can be enjoyed as part of a larger Indian meal with dal, yogurt, and pickles.
