Ingredients: 
  • Green chilies: 8–10 (adjust to your spice tolerance) 
  • Garlic: 6–8 cloves 
  • Peanuts: 2 tablespoons (optional, for texture and flavor) 
  • Salt: To taste 
  • Oil: 1–2 teaspoons 
  • Cumin seeds: 1/2 teaspoon 
  • Coriander leaves: A small bunch (optional, for added freshness) 
Instructions:

1. Prepare Ingredients: 
  • Remove the stems, wash the green chilies and roughly chop them. 
  • Peel the garlic cloves and chop them or keep them whole.

2. Roast the Chilies and Garlic: 
  • Add the chopped green chilies in a pan over medium heat and roast green chilies for 1-2 minutes.
  • Add 1-2 teaspoons oil, cumin seeds, and garlic cloves. SautĆ© on medium heat until they develop light brown spots. Be careful not to burn them, This should take about 3-4 minutes. 
  • Add peanuts to the pan and roast until they turn golden, add coriander leaves, mix 
  • Turn off the heat and let the mixture cool down slightly. 
3. Grind the mixture: 
  • Transfer the sautĆ©ed mixture to a mortar and pestle (preferred for authentic texture) or a blender. 
  • Blend coarsely. Thecha should be slightly chunky, not a smooth paste.

4. Taste and store:
  • Heat oil in a pan, add blended mixture and roast for 4-5 minutes.
  • Add salt to taste and mix thoroughly, 
  • Taste the thecha and adjust salt if needed. If it’s too spicy, you can add a few roasted peanuts to tone it down. 
  • For storing cool completely and store in sealed container in refrigerator or keep with you in a travel upto one week, as a travel food.
