Ragda
Ragda is a flavorful Indian dish made with dried white peas, commonly served with crispy puris or as a topping for chaat items like Pani Puri, Sev Puri, dahi puri, or Ragda Pattice.
Here's a simple recipe for making Ragda:
Ingredients:- Dried white peas: 1 cup (soaked overnight)
- Potato: 1 medium
- Water: 3 cups
- Turmeric powder: 1/2 teaspoon
- Salt: to taste
- Mustard seeds: 1 teaspoon
- Cumin seeds: 1 teaspoon
- Asafoetida (Hing): a pinch
- Ginger-Garlic paste: 1 tablespoon
- Red chili powder: 1 teaspoon (optional)
- Coriander powder: 1 teaspoon
- Cumin powder: 1/2 teaspoon
- Garam masala: 1/2 teaspoon (optional)
- Chaat masala: 1/2 teaspoon (optional)
- Fresh coriander leaves: for garnishing
Instructions:
1. Prepare the Peas:
- Soak the dried white peas in water overnight. Drain the water and rinse the peas.
- Pressure cook the peas with 3 cups of water, turmeric powder, coriander powder, cumin powder, chopped potato, and salt until they become soft and mushy (about 3-4 whistles). Set aside.
- Transfer the cooked peas and potatoes into the pot along with the water they were cooked in. Mix well.
- Bring to boil, and mash some of the peas and potato with a spoon to achieve a thick consistency.
- Add chopped ginger, coriander leaves and Let it simmer on low heat for about 10-15 minutes until the gravy thickens.
- Adjust salt and spices as per taste. Add chaat masala towards the end for an extra tangy flavor.
