Mung bean sprouts usal - simple recipe
Mung bean sprouts usal is a traditional and popular dish from Maharashtra, India, made primarily with sprouted beans or lentils. It is a nutritious and flavorful dish.
Basic recipe for making Mung bean sprouts usal:
Ingredients:- 1 cup Mung bean sprouts
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 pinch asafoetida (hing)
- 1 large onion, finely chopped
- 1 large tomato (optional)
- 2-3 green chilies (optional)
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon goda masala (optional, but traditional)
- Salt to taste
- 1 tablespoon jaggery or sugar (optional)
- 2 tablespoons fresh coriander leaves, choppedLemon wedges (for serving)
- Freshly grated coconut (for garnishing, optional)
Instructions:
1. Preparing the Sprouts:
- Soak the beans overnight or for at least 8 hours. Drain the water, cover them and leave them to sprout for another 8-10 hours.
- In a medium saucepan, bring 3 cups of water to a boil.
- Add salt to taste.
- Add the bean sprouts to the boiling water for 5 minutes, If you like, add 1 teaspoon of turmeric powder for added flavor and color. Drain and set aside.
- Heat oil in a pan over medium heat. Add mustard seeds and let them splutter. Add cumin seeds and asafoetida.
- Add the chopped onions and sautƩ until they turn golden brown.
- Add the chopped ginger, garlic and green chilies. SautƩ for another minute until the raw smell goes away.
- Add the chopped tomatoes (if using) and cook until they soften and the oil starts to separate.
- Add turmeric powder, red chili powder, garam masala, and goda masala. Mix well and sautƩ for a minute.
- Add the mung bean sprouts and mix well. Add salt to taste and jaggery or sugar if using.
- Add a little water if needed to adjust the consistency. Cover and cook on low heat for 8-10 minutes, allowing the flavors to meld together.
