Here's a classic recipe for making Misal Pav:

- 1 cup mixed sprouts (like moth beans, moong beans, or any other beans of your choice)
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- 1 large onion, finely chopped
- 2 medium tomatoes, finely chopped
- 1 teaspoon ginger-garlic paste
- 2-3 green chilies, finely chopped
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon goda masala (optional, can substitute with more garam masala)
- Salt to taste
- 2 cups water
- 2 tablespoons chopped coriander leaves

- Soak the beans overnight or for at least 8 hours. Drain the water, cover them and leave them to sprout for another 8-10 hours.

- In a medium saucepan, bring 2 cups of water to a boil.
- Add the Matki bean sprouts to the boiling water. If you like, add 1 teaspoon of turmeric powder for added flavor and color.
- Reduce the heat to medium and let the sprouts boil for 5-7 minutes, or until they are tender but still slightly

- Heat oil in a pan. Add mustard seeds and cumin seeds. When they start to splutter, add a pinch of asafoetida.
- Add chopped onions and sautƩ until golden brown.
- Add grind masala paste and green chilies (if using), and cook for a couple of minutes until the oil starts to separate.
- Add turmeric powder, red chili powder, garam masala, and goda masala. Cook for a couple of minutes.
- Add the cooked sprouts and mix well. Add water, adjust the salt, and bring it to a boil. Let it simmer for about 10-15 minutes.
- Garnish with chopped coriander leaves.
Serving the Misal Pav:
1. **Assemble:**
- Place a portion of the misal in a bowl.
- Pour some tarri (spicy gravy) over it.
- Top with farsan or sev.
- Garnish with chopped onions and coriander leaves.
- Serve with lemon wedges and pav (bread rolls). You can lightly toast the pav with butter for added flavor.
