Katachi Amti recipe - Cooking at home
Katachi Amti is a traditional Maharashtrian dish made from the stock left after boiling chana dal (split chickpeas). It's a tangy and spicy curry that pairs well with rice, roti Puran Poli.
Here's a recipe Katachi amti for you:
Ingredients:- 1 cup chana dal
- 1 teaspoon cumin seeds
- Garlic
- Dry coconut
- 1/4 teaspoon asafoetida (hing)
- 1/4 teaspoon turmeric powder
- 1-2 teaspoons red chili powder
- 1 teaspoon goda masala (Maharashtrian spice mix) or garam masala
- 2 tablespoons oil
- Salt to taste
- Fresh coriander leaves for garnish
- 2-3 tablespoons tamarind pulp (Optional )
- 1 tablespoon jaggery (optional)
Instructions:
1. Cook Chana Dal: Rinse the chana dal thoroughly and pressure cook it with enough water until it's soft but not mushy. Once cooked, separate the dal from the water (stock) and keep both aside.
2.Prepare masala paste :
- Grind coconut, garlic, ginger, green chili together and make a paste.
3. Tempering:
- Heat oil in a pan, add cumin seeds and let them splutter. Then add hing(asafoetida), chopped garlic.
- Add grind masala paste, curry leaves and cook for a couple of minutes until the oil starts to separate.
- Add turmeric powder, red chili powder, garam masala, and goda masala. Cook for a couple of minutes.
- Add the cooked chana dal stock and mix well. Add water, adjust the salt, and bring it to a boil. Let it simmer for about 10-15 minutes.
6. Sweeten and Simmer: Add jaggery if using and salt to taste. Let the mixture simmer for about 10-15 minutes to let all the flavors blend together.
