Karela (bitter gourd) - easy recipe

Here's a simple and popular Indian recipe for Karela (bitter gourd) stir-fry:
Ingredients:- 4-5 medium-sized karelas (bitter gourds)
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 large onion, finely chopped
- 2 green chilies, slit (optional)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt to taste
- 1 tablespoon lemon juice or tamarind paste (optional, to reduce bitterness)
- Fresh coriander leaves, chopped (for garnish)
Instructions:
1. Prepare the Karela:
- Wash the karelas thoroughly.
- Bring a large pot of salted boiled water and keep karelas in it for 5-10 minutes. This helps to reduce bitterness.
- Cut them lengthwise and remove the seeds. You can also peel the skin slightly if desired, but it's optional.
- Slice the karelas into thin semicircles or rings.
