Udid Vada/Medu vada recipe - homemade recipe
Udid vada, also known as Medu vada, is a popular South Indian snack made from urad dal (black gram). It's typically shaped like a doughnut with a crispy exterior and a soft interior.
Basic Udid vada / Medu Vada recipe:
Ingredients:
- 1 cup urad dal (split black gram)
- 1-2 green chilies (optional)
- 1 inch ginger, grated (optional)
- 1 teaspoon cumin seeds
- 1 small onion, finely chopped (optional)
- A few curry leaves, chopped (optional)
- 2 tablespoons rice flour
- Salt to taste
- Oil for deep frying
Instructions:
1. Soak Urad Dal: Rinse the urad dal thoroughly and soak it in water for 4-5 hours or overnight.
3. Prepare the Batter: Transfer the batter to a bowl.

4. Shape the Vadas: Wet your hands with water, take a small portion of the batter, and shape it into a ball. Make a hole in the center with your thumb to form a doughnut shape.
5. Deep Fry: Heat oil in a deep frying pan. Once the oil is hot, carefully slide the vadas into the oil. Fry on medium heat until golden brown and crispy.

6. Serve: Remove the vadas using a slotted spoon and drain on paper towels to remove excess oil. Serve hot with coconut chutney and sambar or with a side of tea or coffee for a delightful breakfast or snack!
