  • 1 large onion (optional)
  • 2-3 green chilies, chopped
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • Lemon juice (optional)

Instructions:

1. Prepare the vegetables: Peel and cut the carrots and radishes into thin strips or small pieces.

2. Temper the spices: Heat oil in a pan. Add mustard seeds and let them splutter. Add cumin seeds and allow them to sizzle.

3. Cook the aromatics: Add chopped onions and green chilies. SautƩ until the onions become golden brown.

4. Add the vegetables: Add the carrots and radishes to the pan. Stir well to combine.

5. Spice it up: Add turmeric powder, red chili powder, coriander powder, and salt. Mix well to coat the vegetables with the spices.

6. Cook until tender: Cover the pan and let the vegetables cook on medium heat for about 10-15 minutes, or until they are tender. Stir occasionally to prevent sticking.

7. Finish and garnish: Once the vegetables are cooked, sprinkle garam masala (if using) and mix well. Adjust the seasoning if needed. Garnish with fresh coriander leaves.
