Sooji halwa / Sheera with jaggery powder - Cooking at home

Sooji Halwa, also known as Sheera, is a popular Indian dessert made from semolina (sooji), ghee, sugar, and water. It's often prepared for festive occasions and religious ceremonies.  Using jaggery powder instead of sugar gives it a rich, earthy flavor and a healthier twist. 


Simple recipe to make Sooji Halwa / Sheera with jaggery powder: 


Ingredients:

  • 1 cup sooji (semolina)
  • 3/4 cup jaggery powder
  • 2 cups water
  • 1/4 cup ghee (clarified butter)
  • 2 tablespoons chopped nuts (cashews, almonds, or any nuts of your choice)
  • 1 tablespoon raisins (optional)
  • 1/2 teaspoon cardamom powder (optional)
  • A pinch of saffron (optional)
  • 2 tablespoons grated coconut (optional)

Instructions:


1. Roast the Sooji:
In a heavy-bottomed pan, Add the sooji to the pan and roast it, stirring continuously, until it turns golden brown and emits a nutty aroma. This should take about 7-10 minutes.

2. Add Nuts and Raisins:
Add the chopped nuts and raisins to the roasted sooji and sautƩ for another 2-3 minutes until the nuts are lightly browned and the raisins are plump.

3. Add Water:
Slowly and carefully pour the water into the sooji mixture, stirring continuously to prevent lumps. Be cautious as the mixture will bubble vigorously.

4. Add Jaggery powder :
Once the water is fully incorporated, add the jaggery powder . Stir well to dissolve the jaggery powder and continue to cook on low heat until the jaggery powder dissolves completely and the mixture reaches the desired consistency. The mixture will initially be runny but will thicken as it cooks. This will take another 3-5 minutes.

5. Flavoring:
Add the cardamom powder and saffron strands (if using). Mix thoroughly.Continue cooking, stirring occasionally, until the halwa reaches the desired consistency. This typically takes about 5-7 more minutes.

6. Finish and Serve:
  • Add cardamom powder and mix well.
  • If using saffron, soak a few strands in a tablespoon of warm milk and add to the halwa.
  • Optionally, add grated coconut and stir.
  • Serve hot, garnished with additional chopped nuts if desired.

Tips:
  • Consistency: You can adjust the amount of water to get the desired consistency. More water will result in a softer halwa, while less water will make it thicker.
  • Variations: You can add a little milk along with the water for a richer taste.
  • Garnish: Garnish with edible silver leaves (varak) for a traditional touch during festive occasions.
