Here's a simple stir-fried okra recipe with the addition of peanut powder for extra flavor and texture:

Simple Stir-Fried Bhindi (Okra) with Peanut Powder:


Ingredients:
  • 500 grams okra (bhindi), washed, dried, and cut into 1-inch pieces
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 onion, chopped
  • 2-3 garlic cloves
  • 4-5 curry leaves 
  • 1/2 teaspoon turmeric powder
  • Green chili / 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 3 tablespoons roasted peanut powder
  • 1 tablespoon lemon juice (optional)
  • Fresh coriander leaves for garnishing, chopped (optional)


Instructions:

1. Preparation:
  • Wash the okra thoroughly, dry them completely to prevent sliminess, and cut into 1-inch pieces.
  • Roast peanuts in a dry pan until golden brown, cool them, and grind to a coarse powder if not using pre-made roasted peanut powder.
2. Cooking the Okra:
  • Heat the oil in a large pan or skillet over medium heat.
  • Add the cumin seeds and let them splutter.
  • Add the Green chilies, garlic cloves, curry leaves and chopped onions. SautĆ© until the onions turn translucent.
3. Adding Okra and Spices:
  • Add the cut okra and stir well to coat with the oil and cumin seeds.
  • Add the turmeric powder, red chili powder, and salt. Mix well.
  • Cook the okra uncovered, stirring occasionally, until it becomes tender and slightly crispy. This should take about 15-20 minutes. Stir gently to avoid breaking the okra pieces.
4. Adding Peanut Powder:
  • Sprinkle the roasted peanut powder over the cooked okra and mix well. Covered and Cook for another 1-2 minutes, ensuring the peanut flavor integrates well with the dish.
5. Finishing Touches:
  • If using, drizzle lemon juice over the cooked okra and mix well.
  • Garnish with fresh coriander leaves if desired.

6. Serving:

  • Serve hot as a side dish with roti, naan, or steamed rice.
